After the reflection, design and development phases, it is now time for our bakery demonstrator to test two future machines in a real situation. The tests took place in the LAB of Pavailler Solution's headquarters in the Drôme. A large quantity of dough was necessary for these tests to see the resistance of these machines and to adjust every detail.
What did we do with this kneaded dough?
- A large part was cooked and distributed to the employees present on our site of Pavailler Solution. To their great delight, fresh bread every day!
- As far as the surplus is concerned, we have associated ourselves with Méthavéore, a methanization station installed 3 years ago, 10km from our LAB.
It was unthinkable to throw away or waste pasta or cooked bread, that's why we called Olivier, one of the 3 associates of Méthavéore.
Do you know about methanization?
Methanization is a technology based on the degradation of organic matter by micro-organisms, under controlled conditions and in the absence of oxygen. The enormous symbolic domes of the methanization stations could be likened to a giant stomach.
Organic waste, such as our fermented bread dough or baked bread, is introduced into one of the domes to be mixed and ground. The result of this mixing will go into the "digester" for a hundred days, without oxygen at 42°. This natural bacteriological process degrades the waste and produces biogas.
The biogas is then purified and injected into the GRDF gas network. The degraded materials become a natural fertilizer, which will be spread on agricultural land.
