Numerous tests carried out in our lab in the Drôme region, using dynamized and filtered water, have revealed the extent to which unfiltered drinking water has an impact on leavening, fermentation and flavor development... In fact, the vortex in the Volute and Torrent systems allows the water to regain all its energy (like the water that flows down from the mountains and rubs against the rocks 🏔️).
